Last week we started the grape harvest with our organic Pinot Noir grapes for the production of our sparkling wines. For this we look for a must of low gradation and good acidity. We have done the manual vintage in boxes of about 200 kg that we keep in the cold room for later destemming and pressing. A good part of this grape will be used to make our sparkling wines Siós Brut Reserva 2018: our sparkling Siós Brut Blanc de Noirs and Siós Brut Rosé, our sparkling rose wine.

If a few days ago we showed you the inflorescences of the strains in our social networks, today we bring you the images and a little explanation about the flowering of the vine that is the stage that we are currently living on our estate. This moment is very delicate and crucial for the development of the vine in order to achieve the desired production as well as the effect on the health status of the fruit. In short, it is a decisive moment that will directly influence the production and quality of the wines of this vintage and that is why all our senses are now, more than ever, in the care and vigilance of the state of the vineyards.

The contest was born in 2013 when the Interprofessional Council of Wines of Roussillon organized the first edition of "Grenaches du Monde" and in a few years has become an important event for wine professionals from around the world.

In Costers del Sió Winery we are always aware of the care of the vineyards since this care depends entirely on the production and quality of the grapes and therefore on our wines.

We know that the Syrah and Garnacha varieties adapt perfectly to our terroir (*) and, for this reason, these days we have been grafting grape vines of the Merlot variety with cuttings of the Syrah variety. The grafting process is a very careful and artisan work that is manually made vine by vine. Today we explain the process in order to get you closer to our vineyards and to know a little more about the work we are doing before you can taste our estate wines.

Spring arrives and the vineyards awake from their winter lethargy and return to the activity announcing us, with the bud burst or sprouting, the beginning of a new annual cycle. The vine buds that remain dormant during the winter bloom in spring and will become leaves in just a few days.
